How my bread is made

My yeasted breads are made by the “sponge & dough” method. This means that part of the dough is fermented overnight and mixed with the main dough the following day. This process not only enhances the flavour but aids digestibility and the keeping qualities of the loaf.

My sourdoughs contain no baker’s yeast and are made with either my own rye or white sour culture (wild yeasts). These breads take more than a day to prepare.

When I bake

I bake every Thursday and loaves are ready for collection between 3 and 6 pm from the Sticky Kitchen, 21 Hawthorn Road, Wallington, Surrey SM6 0SY.

Split Tin Wholemeal

Split Tin Wholemeal (400g)

A yeasted wheat bread made in a traditional loaf tin with 60% wholewheat flour and 40% white flour. Great for sandwiches and for toasting.

Split Tin White

Split Tin White (400g)

A yeasted wheat bread made in a traditional loaf tin with 100% white flour. Great for sandwiches and for toasting.

Rye Sourdough

Rye Sourdough (400g)

No baker's yeast. A 100% rye wheat made with a rye culture, rye flour and kibbled rye.

Rye Sourdough (400g)

No baker's yeast. A 100% rye wheat made with a rye culture, rye flour, figs and molasses.

Soda Bread

Soda Bread (600g)

No baker’s yeast. Made with a mixture of wholewheat and white flour, raised by bicarbonate of soda and buttermilk. Contains sun-dried tomatoes, feta cheese, sunflower seeds and oregano.

White sourdough

White Sourdough (600g) 

No baker’s yeast. A soft, slightly sweet tasting bread, made with wild yeast, white flour and a little milk and butter. 

Spelt bread

Spelt Bread (400g)

A yeasted bread made with 100% wholewheat spelt flour. The addition of a little butter and brown sugar makes this a very light wholemeal loaf.

Walnut bread

Walnut Bread (600g)

A yeasted bread made with wheat flour, rye, oats, cornmeal and toasted walnuts.

Delicious with cheese.
